Thai Cucumber Salad
1 large cucumber
1 small onion
1/4 cup sugar
1 tablespoon salt
1/4 teaspoon cayenne powder
1/4 cup very hot water
1 cup white vinegar
Dice the cucumber into 1/4 inch squares, removing seeds.
Mince the onion.
Mix the sugar, salt, and cayenne powder into the hot water.
Stir until the sugar is dissolved.
Add the cucumber, onion, and vinegar.
Let sit at room temperature until the mix cools off.
Chill in the fridge for at least an hour (if you can wait, it tastes better on the second day).
